Last night, Markel and I made tuna melts with Greek yogurt (instead of mayo) on double fiber wheat bread. And I have to say…they were fantastic! You really couldn’t tell that Greek yogurt was subbed in for mayo and the bread tasted just like normal wheat bread.
I made Markel’s tuna plain with a little pepper. For mine, I added relish and a touch of Siracha to give it a nice kick.
(In the next few weeks, I’m going to slowly try to incorporate more healthy substitutes and more fiber into my diet. The older I get, the slower my metabolism which is pretty darn scary!!)
