Spaghetti Squash

I am a new believer of spaghetti squash.  With that being said…I also think it’s only good if prepared properly.

My first attempt (below) wasn’t awesome.  It wasn’t cooked all the way (because I cut it a little unevenly) and I used just olive oil, salt, pepper and goat cheese.  Uhhh not tastey.

But the second time, I used Tomato Meat Sauce and it was AMAZZZZING.  The tomato sauce enhaces/masks the squash flavor and it feels like you’re eating pasta.  The original olive oil sauce was…just not good.  If you find a recipe that has a heavier sauce~~ i say go for it!

This fall/winter I will try to make this a few times so that Markel and I have some low-carb, healthy meal alternatives ❤
