Tuna and Egg Salad over Spinach

I had SUCH a crazy hankering for Tuna Salad lately and I made a unique recipe.  Not sure if you’ll love it but here it is:

1 can of tuna (in water not oil)

2-3 stalks of cucumber (chopped)

2 hardboiled eggs (only 1 yolk used)

Mayo

Spicy Brown Mustard

Salt

Pepper

I added the egg to give it a little more protein and keep me fuller longer.  Right now I’m trying to eat less carbs (not no carbs, just less) and this was dish I could eat a lot of without getting tired of it.  I put a large spoonfool of it (ice cream scooper size) on top of a bed of lettuce without dressing.  It’s the  perfect lunch or dinner meal to fill you up but not weigh you down. =)
